Lina’s Recipe Corner

It’s Friday! Time for Some Fun!

Spring is in the air, and when I think of Spring, I think of Paris, and being outside, and, well, crepes.

So for today’s Food idea, I’m throwing you an easy one: Crepes! They are just so yummy and french.

Here is the how to:

Ingredients

1 1/2 cups whole milk

3 eggs

3 tablespoons sugar

1 1/2 teaspoon salt

5 tablespoons unsalted butter, melted

1 teaspoon vanilla

1 cup flour

canola oil, for cooking

jam, sugar, nutella, fruit, or ham and cheese

  • Pour milk into blender. Crack in eggs, buzz on medium speed, 10 seconds.
  • Add sugar and salt, buzz 10 seconds.
  • Add butter, vanilla, flour, one at a time, blending well after each.
  • Set batter aside at room temp for 30 minutes or chill overnight.
  • Find the crepe pan, if you have one. If not, choose a small heavy skillet. Set over medium heat. Brush with oil.Pour in just enough batter to cover the bottom of the pan (tilt the pan to spread evenly).
  • Flip, using a thin metal spatula, once the edges have turned golden and the center is speckled with tiny holes, 1-2 minutes. Cook second side golden, 1 minute.
  • Serve with jam, or a sprinkling of sugar, or my favorite crepe – serve with nutella! Fold into quarters and wrap in wax paper. Hand it over to the happy and go on your merry day!

All right. And for a little extra fun today check this blog out. It’s my friend Tina’s, and she makes these amazing rings that I bought and so did all my friends! Check it out by clicking sweetfloweret.blogspot.com.

I think we’re good. Have a great day and see you tomorrow!
