Before I give you today’s recipe, I’ve got 5 Healthy Tips for you!
1. Keep Healthy Snacks around. My latest favorite are the steamables! Grab a few bags at the grocery store and leave them in your freezer for a great late night snack!
2. Don’t eat after 7pm.
3. Remember to eat breakfast like a queen, lunch like a princess and dinner like a pauper.
4. Fresh is better than processed. Less salt, less preservatives. Takes more work but it’s better for you!
5. Just because it’s low fat doesn’t mean you can have more. Remember portion control!
And now for today’s recipe!
Chorizo and Potato Baked Frittata
1 cup finely chopped chorizo sausage
1/2 cup chopped onion
2 cups thawed frozen potatoes O’Brien
1 cup canned black beans, drained and rinsed
10 large eggs
1/2 cup heavy whipping cream
1 tsp salt
1/2 tsp ground cumin
1/2 tsp ground black pepper
1 cup shredded sharp cheddar cheese
1 cup shredded monterey jack cheese
1. Preheat oven to 350
2. in a skillet, cook chorizo and onion over medium heat until chorizo is browned. Remove from heat. Stir in potatoes and black beans.
3. In a large bowl whisk together eggs, cream, salt, cumin, pepper. Pour over chorizo mixture. Add cheeses, stirring gently. Bake for 30-35 minutes. Let cool for 10 minutes.
Garnish with parseley and serve with grapes on the side!
