Mediterranean Give Away

Let’s start by taking care of the important things first.  Starting today, I will use the last Friday of each month to give away a gift card to one of my email subscribers (you can still subscribe by clicking on the email icon above).

Now onto our Friday recipe which I’m sure you’re waiting in anticipation for.

Last week I honored the french. Today I’m honoring my people the Mediterraneans. I do have to give credit to my friend Sara for this amazing recipe. She promised me it’s easy to make and delicious.

Mediterranean Salad

Ingredients:
1/2 box of Orzo Pasta
1 Container of grape Tomatoes
A bunch of green onions
1 Cucumber
1 Green Pepper
1 Jar of Greek Olives
1 Container of crumbled feta
1 Lemon
Olive oil

Directions:

Cook the orzo according the the instructions on the box.  Drain and drizzle with EVOO.  Cut the tomatoes, onions, cucumber, green pepper and the olives.  Add to a big bowl.  Mix with the orzo.  Drizzle more EVOO on it and add the juice from a lemon.  Mix again.  Add most of the feta cheese and mix.  Put the rest of the feta on top, and serve.

    I’ve had Sara’s salad before… it is ahh-mazing and I don’t typically love Mediterranean salad’s. It’s very fresh and super tasty :)

      well i love orzo in any form. it’s very “mediterranean”. so you can pretty much throw it in ice cream and i’ll eat it!!

    This sounds easy and tasty. But not sure what EVOO is but I’ll give it a try and see.
