Valentine’s Menu

Here’s a Valentine’s Day menu you can thank me for later!

Salad Wedge

Head iceberg lettuce, cut into quarters

Blue cheese dressing

1 tomato, minced

2 green onions, chopped

½ cup crumbled blue cheese

1 cup cooked bacon, crumbled

  1. On each salad plate, place 1 wedge of lettuce turned on its side
  2. Pour blue cheese dressing on wedge
  3. Sprinkle with tomatoes, green onions, crumbled blue cheese, bacon

Potatoes

2 pounds red new potatoes, quartered

¼ cup EVOO

Leaves from ¼ bunch fresh thyme

Salt

  1. Preheat oven to 375 degrees
  2. Toss together potatoes, oil, thyme, and sprinkle with salt
  3. dump potatoes out on a baking sheet and roast until tender and crisp on the edges, 30-40 minutes

Steak

1 tablespoon EVOO

2-4 new york strip steaks, ¾ inch thick

Salt and freshly ground black pepper

3 tablespoons butter, divided

1 large shallot, finely chopped

2 tablespoons flour

1 cup dry red wine

  1. Heat a large nonstick skillet over high heat
  2. Add a little oil to coat pan
  3. Sear steaks, 2 minutes on each side, reduce heat to medium and cook 3-5 minutes longer for medium rare, 7-8 minutes longer for medium well
  4. Remove steaks to a warm plate to rest (stop here if you don’t want sauce)
  5. Add 2 tablespoons butter and the shallots to the pan and cook 2-3 minutes
  6. Stir in flour and cook a minute longer
  7. Whisk wine into pan and scrape up pan drippings
  8. Add the last pat of butter and remove pan from heat
  9. Spoon wine and shallot sauce over the steaks and serve with potatoes

Steam Broccoli or Asparagus and serve on the side

Don’t forget a Bread


Dessert: Easy Chocolate Cake

1 ½ cup cake flour, sifted

1 cup sugar

¼ cup cocoa

2 eggs

1/3 cup butter, softened

½ cup water

½ tsp salt

1 ¾ tsp baking powder

1 ½ tsp vanilla

  1. Preheat over to 350 degrees
  2. Spray 9×13 in pan with non stick spray and dust lightly with flour and cocoa
  3. combine ingredients in order listed
  4. bake for 30 minutes or until a toothpick inserted in center comes out clean.
  5. cool for 10 minutes and frost as desired

(You can cheat and make a devil’s food chocolate cake instead. My favorite served with ice cream).
